Campfire Coffee
  • Fill a coffee pot with water and place or hang it over the fire.

  • Add ground coffee – use a coarse grind suitable for boiling – about 1 tablespoon per cup (150 ml).

  • Bring to a boil – how long you let it boil is a matter of preference. Some bring it to a boil three times, others remove it at the first bubbles.

  • Take the pot off the fire and let it sit for a couple of minutes so the grounds can sink to the bottom.

  • Serve and enjoy.

Stick Bread

Ingredients:

4 dl (1 2/3 cups) wheat flour
½ tsp salt
1½ tsp baking powder
1¾ dl (¾ cup) water

Method:

  • Mix the flour, salt and baking powder in a bowl.

  • Add the water and work into a dough.

  • Shape the dough into finger-thick lengths and wrap them around sturdy sticks.

  • Bake over the embers. When you can slide the bread off the stick, it’s ready.

Kolbulle (Swedish Pork Pancake)

Ingredients (makes 4):

5 dl (2 cups) wheat flour
1 tsp salt
6 dl (2½ cups) water
325 g (11 oz) sliced salted pork

Method:

  • Whisk together the water, flour and salt in a bowl.

  • Dice and fry the pork until crispy, then set aside.

  • Reheat one quarter of the crispy pork in a pan and pour an equal portion of batter on top.

  • Cook over medium heat for about 3 minutes, flip and cook for another 2 minutes.

  • Repeat with the remaining batter.

Krabbelurer (Swedish Mini Pancakes)

Ingredients (about 12):

1½ dl (2/3 cup) granulated sugar
4½ dl (1 3/4 cups) wheat flour
2 tsp baking powder
1 tsp vanilla powder or vanilla sugar
2½ dl (1 cup) milk
2 eggs
2 tbsp butter

Method:

  • Mix sugar, flour, baking powder and vanilla in a bowl.

  • Whisk in the milk until smooth, then add the eggs.

  • Fry small pancakes in butter until golden.

  • Serve with jam, apple sauce or fresh berries. Whipped cream is optional but recommended.
